1. Put ingredients in a bowl and mix with a hand blender or put all the ingredients in a food processor to mix. This is important or else you won't get a nice thin batter, mix until you get a smooth batter.
2. Spray a medium pan with non-stick spray or use coconut oil.
3. Over low-medium heat add each pancake one or two at a time. Let cook for 24 mins on each side. Be patient but watch carefully.
4. Top with honey, syrup, nut butter etc, I used peanut butter in between each layer and topped with greek yoghurt and honey. This will alter the macros below.
