Corned Beef Hash

~ Breakfast Recipe ~


  • 2 pounds potatoes, peeled and cut into ½ inches pieces 
  • 1 tbsp olive oil salt and pepper
  • 4 slices of bacon cut into ¼ inch pieces 
  • 1 chopped onion 
  • 2 garlic cloves minced 
  • ½ tsp minced fresh thyme 
  • 1/3 cup heavy cream 
  • ¼ tsp hot sauce 
  • 12 oz thinly sliced corned beef cut into ½ inch pieces 
  • 4 large eggs 



  • In a bowl mix potatoes olive oil, salt and pepper 
  • Microwave potatoes 7-10min until they start to get soft
  • Cook bacon in a skillet on medium heat
  • Stir in onion into the skillet and cook until lightly browned
  • Add garlic and thyme and cook for about 30 seconds 
  • Stir in cream, hot sauce, and potatoes and lightly pack everything together and let it cook for a couple minutes 
  • Flip the hash and let the other side cook for a couple minutes, repeating the whole process one more time
  • Stir in corned beef and lightly pack into the hash letting it cook for a couple minutes
  • Turn off the stove
  • Use a spatula and make 4 indents
  • Crack 1 egg into each indent, cover skillet with a lid and let egg cook until its white 
  • Serve!
